SALMON FILET IN KUMQUAT SYRUP

Ingredients

  • 500g shredded carrots
  • 4 chopped green onions
  • 2 tbl chopped coriander or chopped parsley
  • 8 sliced and pitted kumquats
  • 5 tbl white wine vinegar
  • 1/2 tbl lemon zest
  • 1 tsp Dijon mustard
  • 1/4 tsp paprika
  • 1/4 cup olive oil
  • salt and pepper

Preperation

  1. In a medium bowl, mix carrots, green onions, chopped coriander/ parsley and kumquats.
  2. In a small closed jar, mix vinegar, lemon peel, mustard and paprika.
  3. Add the oil gradually and mix.
  4. Season with salt and pepper and pour on the salad.
  5. Mix well.
  6. Cover and refrigerate for two hours.
