SALMON FILET IN KUMQUAT SYRUP
Ingredients
- 500g shredded carrots
- 4 chopped green onions
- 2 tbl chopped coriander or chopped parsley
- 8 sliced and pitted kumquats
- 5 tbl white wine vinegar
- 1/2 tbl lemon zest
- 1 tsp Dijon mustard
- 1/4 tsp paprika
- 1/4 cup olive oil
- salt and pepper
Preperation
- In a medium bowl, mix carrots, green onions, chopped coriander/ parsley and kumquats.
- In a small closed jar, mix vinegar, lemon peel, mustard and paprika.
- Add the oil gradually and mix.
- Season with salt and pepper and pour on the salad.
- Mix well.
- Cover and refrigerate for two hours.
