KUMQUAT MUFFINS
Ingredients
- 10 clean, sliced kumquats
- 1/2 cup sugar
- 1/4 cup brown sugar
- 2 eggs
- 1/4 glass coconut oil
- 200-250 cc orange juice
- 1 cup self-rising flour
- 1/2 cup white flour
- 1 tsp baking soda
- Pinch of salt
Preperation
- Mash the fruit together with the wet materials and the sugar, until you get a puree.
- Add eggs, flour and baking soda.
- Preheat the oven to 180°C
- Pour into a lightly greased muffin tray, and bake until the muffins are ready (about 10-15 minutes).
